Philip and Simon Thompson announced their plans for the Dornoch distillery back in 2015, with a successful crowd-funding campaign 2016 leading to the establishment of the distillery on-site at Dornoch Castle Hotel; one of the World’s leading whisky bars in Dornoch owned by the Thompson brothers.
Housed in the Old Fire Station on the grounds of Dornoch Castle Hotel, the brothers are focussed on making a style of whisky that has been long extinct, using floor malted organic heritage barley varieties to make it, and utilising long fermentations with brewers varieties of yeast in their wooden washback

Lowrie's Reserve (Small Batch Blended Scotch)
Thompson Bros found themselves fortunate, stumbling upon an opportunity to acquire three hogsheads of exceptionally well-sherried and reasonably matured blended Scotch whisky. Taking possession of these three hogsheads, they decided to combine them with two barrels of 11-year-old Speyside whisky matured in bourbon casks, the origin of which remains unknown.
20.8% of this blend comprises 1994 Strathclyde, refill barrel matured. The long maturation in refill bourbon adds a layer of texture to the blend.
Finally, they incorporated SRV5 extracted from Vat 5, transferring it into a former Australian Shiraz wine cask that had previously served to mature for beer by the talented individuals at Campervan Brewery in Edinburgh.
